BROIL
खाने को एक तेज़ गर्म सतह के नीचे रख कर उसकी heat से पकाने की प्रक्रिया को broiling कहा जाता है।
Don’t confuse broiling with boiling.
• I prefer broiling the potatoes rather than frying them in this recipe.
(मैं इस रेसिपी में आलू को तलने की बजाय ब्रोइल करना पसंद करती हूं।)

BOIL
When it comes to cooking, तेज़ उबलते हुए पानी में डालकर किसी खाद्य वस्तु को पकाना boiling कहलाता है।
• I like to eat boiled eggs instead of an omelet.
(मुझे ऑमलेट के बजाय उबले हुए अंडे खाना पसंद है )

POACH
Poaching is a rather fancy and a less common method of cooking.
Food items जैसे कि नाशपाती, मछली या अंडे को उसकी skin/shell (छिलका) के बिना हलके उबलते हुए पानी या किसी और liquid (जैसे की दूध) में पकाने को poach करना कहते हैं।
• I had poached eggs for breakfast.
(मैंने नाश्ते में पोच किए हुए अंडे खाए थे।)

BLANCH
सब्ज़ियां या ऐसे ही खाद्य पदार्थों को कुछ मिनट के लिए उबलते हुए पानी में डाल कर निकाल लेने को blanching कहते हैं।
सब्ज़ियों को freeze करने से पहले या आगे और पकाने के लिए तैयार करने के लिए उन्हें blanch किया जाता है ।
Blanching also helps to make the food white (for cauliflower), remove their skins (for tomatoes) or get rid of strong flavours.
• Blanching the peas before freezing gives them longer shelf life.
(मटर को फ्रीज़ करने से पहले ब्लांच करने से वे लम्बे समय तक ताज़ा रहती हैं। )

अक्सर हम cookery shows में chef को खाना बनाने की विधि बताते समय कुछ ऐसे शब्दों का इस्तेमाल करते सुनते हैं जिनका अंदाज़ा हमे जल्दी से नहीं हो पता है।
आएं सीखते हैं कुछ ऐसे ही fancy cooking words:

BAKE
Oven/ Microwave में cake या bread जैसी चीज़ें पकाने को bake करना कहते हैं।
Technically, directly आंच पर रखे बिना, केवल dry heat के माध्यम से (in a closed space) खाना पकाने की प्रक्रिया को baking कहा जाता है।
• I love the aroma of a freshly baked bread.
(मुझे ताज़ा बेक की गयी ब्रेड की मीठी सुगंध बहुत पसंद है।)

ROAST
पानी का प्रयोग किए बिना सब्ज़ी, मीट या nuts को oven या direct flame पर भून कर पकाने की प्रक्रिया को roast करना कहते हैं।
• She has made a delicious roasted chicken for dinner.
(उसने रात के खाने में स्वादिष्ट रोस्टिड चिकन बनाया है।)

GRILL
जब एक grill यानी metal की जाली का use कर, खुली आंच पर खाने को पकाया जाए, तो उसे grill करना कहते हैं।
आजकल ऐसे बहुत से खाना पकाने के बर्तन हैं जिनमें actual ग्रिल का use किए बिना ही खाने में grill marks बनाए जा सकते हैं। In such cases, an open fire is not a prerequisite.
• This place serves the best grilled sandwiches.
(इस जगह सबसे अच्छे ग्रील्ड सैंडविच मिलते हैं।)

एक open fire grill को barbeque भी कहा जाता है।

FAUX PAS
Origin: French
Meaning: एक सामाजिक तौर पर की गयी गलती/ बेवकूफी।

BONA FIDE
Origin: Latin
Meaning: Bona fide का अर्थ ‘नेक-नियति’ व असल होता है।
